It’s Friday night and what could be more fitting than a recipe for burritos? But not just any burritos, these are Gochujang Bean Burritos with Kimchi Queso. Yes, these deliver K-Mex-inspired refried pinto beans, covered with a K-Tex-inspired queso, rolled up in a Cal-Mex-inspired format. There’s a whole lot of inspiration behind these bad boys and I am here for it. It’s very difficult for someone from the east coast of Canada to make any burrito “authentically” so why not have some fun with it.

If you told me a year ago that I would miss a visit to my local pub the most, I wouldn’t have believed you. At the beginning of lockdown, I was too busy lamenting canceled vacations to give my favorite bar much thought. But, just a little over a year into this pandemic, here I am missing fish and chips and a cold pint more than my own mother…not really, but it is close. It really is the everyday indulgences I miss. Dawdling through the grocery store, meeting up with friends for a cocktail, or popping out for a meal on a whim. But we’re still in this mess, so the best I can do is turn my living room into a watering hole and serve the best pub grub I can muster, like these Poppyseed Pretzel Knots with Beer Braised Onion Queso.

It’s the last week of August and I’m over here pretending summer is forever. Yes, the dishes on Instagram feeds everywhere are getting cozier but clearly, I didn’t get the memo. Instead, I’m living in a haze of popsicles, crisp chilled salads, and grilled proteins like September is never going to come. I, of course, know it will but that’s no reason to draw attention to it. It’s so much better to live in an endless summer delusion and while shoveling Grilled Corn Queso into your mouth. Okay, so maybe the word “better” is a little strong, but this is the “self-care” regiment I’m currently working with.

I have a confession to make. I love veggie burgers and not in an ironic way or a “close enough” kind of way. No, I really do love them. Well, I love them as long as they stay true to their veggie patty roots. Start packing soy and seitan in there and you’re going to get a hard pass from me. I know people swear by that kind of thing. But I don’t want an imposture or a stand-in for the burger of the meat variety. I want an honest to god veggie burger, beans and all. And somewhere in all this rambling is, I’m sure, a compelling lesson about being yourself. But man, I don’t want to tease that out. These Chipotle Pinto Burgers are more frivolous and fun than all that. So, deep and compelling they may not be, but proper veggie burgers? Oh, that they certainly are.
