There isn’t much in this world that I adore more than noodles. The chewy strands make me positively poetic. But I will spare you my romantic musings about this oh-so-special carb and get to the point. Noodles are my favorite and today’s Silken Tofu Noodles are my current reigning favorite noodles, making this dish my favorite-favorite. If that’s not a ringing endorsement for this bowl, I don’t know what is. So what are we looking at here? You’re looking at a tangle of Shanghai Noodles dressed in a creamy ginger-heavy silken tofu sauce topped with braised shiitake mushrooms and bamboo shoots, crisp cucumbers, sesame seeds, and chili crisp. In a word, this dish is divine.

Kale and I are not the best of friends. I know it’s good for you and yes, I am aware of its versatility but most of the time it’s just too fibrous for my taste. That’s why you’re far more likely to see Tuscan or Lacinato kale on this blog rather than the green or red variety. But even the more tender members of the kale family can require a lot of chewing. That’s where this Marinated Kale Salad comes in. This fully loaded bowl of green goodness features bite-sized pieces of kale marinated in a pickled shallot rice wine vinaigrette. The bowl is rounded out with soy braised tofu pieces, heirloom carrots, blood orange segments, and tamari almonds. Trust me, this is far from a sad desk salad.

There’s been a lot of talk about belt-tightening lately. And it’s not hard to see why. I paid $8 for a pound of butter the other day. And I have very fond memories of paying $6 for the same amount not that long ago. Consequently, I have been more financially conservative at the grocery store. A necessity I hate and resent. And all of these limitations have me reminiscing about my university days, particularly the struggle meals that sustained me. Today’s Smoked Tofu Chili is a descendant of one such meal. I guarantee whatever concoction I was eating ten years ago was not as good as this. But the bones were there and the comfort it gives me is the same, so let’s make it.

There are few things I love more than a classic Caesar salad. But if you visit this website on a semi-regular basis, you already knew that. I play with caesar flavors a lot. Remember this little flatbread riff or this deeply satisfying kale version? I even gave the traditional dish the Overthinking Classics treatment. But today’s Tofu Katsu Caesar Salad is my current favorite. And it’s different from the rest because it is 100% vegetarian. This salad feature napa cabbage, bok choy, and yu choy dressed in a miso caesar dressing topped with a crisp tofu katsu and sprinkled with oyster mushroom “bacon”. I am head-over-heels in love with this salad, so let’s make it!
