It’s the end of February, only carbs and cheese will do. We had a bit of a snowstorm in Toronto this week. And while we’ve been enjoying a reasonably mild winter this year, this is always the point in the season where my patience begins to wear thin. The cold feels more insulting, the snow more cumbersome, and the road salt more disgusting. And as anyone Canadian will tell you, March offers very little respite from the winter weather. The calendar may announce the arrival of Spring but more often than not the forecast has other plans. So when I hit this weather-worn state while staring down the barrel of yet more winter, I like to make things like today’s Pesto Shallot Cheese Buns to help see me through. They’re a cozy and unabashedly indulgent ray of sunshine when there is very little to be found. So let’s make them!
Scotch eggs, in their original form, are among my favorite guilty pleasures. For the uninitiated, a scotch egg consists of an egg enrobed in sausage meat, rolled in breadcrumbs, and deep-fried for good measure. It’s a fairly debaucherous snack to be sure, but oh so worth it for every greasy bite. But for the vegetarians in the crowd, the scotch egg is a no-fly zone. And I think that’s too bad because, to me, the sausage meat in a scotch egg is far from the main attraction. The mark of a good scotch egg, in my books, is a crisp exterior matched with a gloriously runny yolk. So, I nixed the sausage meat and replaced it with a homage to another British classic – mushy peas. And boom! These Vegetarian Scotch Eggs were born.
When I first arrived in Toronto at the tender age of 20, I had a crap, overpriced apartment, a crap retail job and, shockingly, not a crap ton of money. Yes, I was living that penniless student cliche in the worst way and that meant living off of boxes of knock-off cereal (generic Fruit Os forever!) and sodium-laced noodles. But once in a blue moon, usually on a Friday, I would treat my broke ass to a schnitzel sandwich and a beer at The Red Room. Today’s Pork Schnitzel Sandwiches with Granny Smith Slaw are a homage to the sandwich.
