Hey guys! I’m writing this while on a plane heading back to my hometown of Halifax. I plan on keeping things short because 1. it’s Christmas Eve Eve and you have more important things to do than listen to me prattle on. And 2. this plane is experiencing turbulence and my extreme cowardice is disrupting my creative flow…or something like that. So, let’s just cut to the chase.

Yes, that’s right, they pop, so much so that a friend of mine called the bark “Pop Rocks for adults”. I took it as a compliment because it is.

What do you have to do to make this three-ingredient delight? Not a heck of a lot. Melt some chocolate. Pour it on some parchment. Top the chocolate with pomegranate and sea salt. Chill it and crack it. That’s it! Melt, pour, top, chill and crack. The end. It’s a Christmas miracle!

Pomegranate Sea Salt Bark

Ingredients
  

  • 1 250g bag dark chocolate chips
  • 3/4 cup pomegranate arils
  • 1 1/2 teaspoons good quality sea salt

Instructions
 

  • Pour chocolate chips in a small saucepan and place over low heat. Stirring constantly, cook until the chocolate is completely melted.
  • Pour the melted chocolate onto baking sheet lined with parchment paper. Using an offset spatula, even out the surface of the chocolate.
  • Sprinkle the pomegranate and sea salt evenly over the chocolate.
  • Transfer the bark to the fridge and chill for 2 hours or until set.
  • Crack the finished bark into shards. Serve immediately or chill until ready to serve.
