Corn Fritter Breakfast Stacks with Lime Pepper Mayo

Place the bacon in a large cast-iron skillet over medium heat. Fry the bacon until crisp. Don't wipe out the skillet.

Place the mayo, lime juice, and pepper in a bowl and stir to combine. Transfer the mayo to the fridge and chill until ready to serve.

In a large bowl whisk to combine the flour, sugar, baking powder, and salt. Add the corn, cilantro, and garlic. Gradually integrate the dry ingredients into the wet until a batter forms.

Spoon the fritter batter into the hot skillet using a 1/4 cup measure as a guide. Work with 3-4 fritters at a time. Fry the fritters until golden on both sides, about 3 minutes per side.

Top a fritter  with the lime pepper mayo. Top the mayo with 2 tomato slices, radish, and a piece of bacon. Place another corn fritter on top and repeat. Finish with a fried egg.
