Form a well in the center of the dry ingredients and add the wet ingredients.
Knead the dough until smooth and elastic. Let rise for an hour and a half.
Pour the wine into a large saucepan and add the honey, stir to combine.
Add the apples, cinnamon stick, and star anise.
Let cook, uncovered, until the apples are tender.
Place a poached apple half in the center of each challah circle.
Take the tarts out of the oven and immediately brush the apples with honey.
