- Place the mayo, garlic, and lemon juice in a bowl. Stir to combine. Chill until ready to use.1/2 cup mayo, 2 cloves garlic, 1 tbsp lemon juice
- Heat the oil in a large skillet over medium heat until shimmering. Add a few basil leaves at a time and remove once crispy but before they brown too much.** Transfer the basil leaves to a plate lined with a paper towel. Set aside to drain.⅓ cup neutral oil , 1/4 cup fresh basil leaves
- Place the halloumi slices in the skillet and sear on both sides until golden. Transfer to a plate and set them aside as well.1 block halloumi
- Slather the mayo onto each slice of toast. Top two of the pieces of toast with the mixed greens. Place 3 pieces of the seared halloumi on top of the greens and add two slices of tomato as well. Sprinkle the tomato with flakey salt and fresh ground pepper.4 slices bread, 1 cup mixed greens, 1 heirloom tomato, flakey salt, fresh ground pepper
- Top the tomato with a pile of the fried basil and place the remaining pieces of toast on top. Slice each sandwich on the diagonal and serve immediately.
Notes
** Frying basil takes no time at all, so be ready with tweezers to pluck the basil leaves out of the oil the moment they start to brown.
