We are only a couple of days away from bidding adieu to 2021 and from where I’m sitting, that is a very good thing. Sure, I had some good times this year but being the eternal optimist that I am, I’m inclined to believe the best is yet to come. And although I was decidedly wrong about 2020 and 2021. I live in hope that I will be right eventually. Even a broken watch, right? So in the spirit of carefully hoping for better things, I present you with this exuberant French 75 Panna Cotta for two complete with a candied kumquat halo. This is my final dish of 2021 and the closing sweet note of my brief but, I like to think, very romantic New Year’s at-home date menu.
Smoked Salmon Tartare with Confit Egg Yolks
I’m back from my Christmas breather to share with you a couple of recipes for New Year’s Eve. Now, these are not for party planners or people expecting a crowd of 50. No, what I have in store for you is a chill but luxurious New Year’s menu for two. You could accommodate up to four if necessary but I did envision this menu as a sort of at-home date night. Consequently, all the dishes are fairly romantic and require very little fuss to serve the day of. No one wants to be stranded at the dinner table as their date fiddles with something in the kitchen. Undivided attention is what we’re after and that all starts with this Smoked Salmon Tartare.
Bourbon Sweet Potato Pie with Molasses Meringue
Welcome to the final dish of my 2021 Holiday Menu and my last post before Christmas. And what a recipe to go out on. This Bourbon Sweet Potato Pie features a slightly savory pecan-studded crust, a velvety bourbon-spiked filling, and a crown of toasted molasses meringue. This pie hits all the festive notes. Warm, cozy, and boozy with a dash of nutmeg for good measure. Now, obviously, this dish breaks with the seafood theme of my holiday menu. But I figure you’ll forgive me this slight deviation from the rules because a seafood dessert is hard to come by. And a good seafood dessert seems impossible. But prove me wrong. I would love nothing more.
Seared Scallops with Butternut Celeriac Mash
We’ve arrived at the main event of my 2021 Holiday Menu. After a round of Fried Oyster Sliders, a bowl of Miso Mussel Parsnip Bisque, and a side salad that thinks it’s a whole dang meal, you’ve got this plate of heaven. Yeah, all I can say is don’t wear restrictive pants. So what are you looking at? This beauty of meal features seared scallops and a velvety butternut celeriac mash, topped with crispy kale, and preserved lemon butter. It has all the makings of a fancy meal but luckily it’s quick and easy to pull off. I’ve already asked you to make three courses for this feast, I simply cannot ask anything too taxing of you. There is one potential timing dilemma with this recipe, but it’s also a fantastic opportunity to add a dash of culinary theatrics to your evening. So let’s dive in.
