Lasagna is one of those universally loved comfort foods. The classic Bolognese and bechamel pasta tower is a culinary force to be reckoned with. But I chose to reckon, I chose to play, and I chose to put apples in this classic. Some would call today’s Apple Cheddar Lasagna quirky, others would call it blasphemy, but I just call it a salty/sweet delight. So what are you looking at? Well, this lasagna features a mushroom and cheddar bechamel, shingles of Ontario-grown Honeycrisp apples, spinach mixed with ricotta, and a gooey melted mozzarella top. This lasagna is as delicious as it is offbeat. So let’s dig in.

Sometimes a simple plate of pasta is all you need. And while I wish I could say, I only need pasta when the chips are down, that’s not remotely true. I’m pretty much in a perpetual state of wanting pasta. I use it to celebrate, commiserate, and lately, hibernate. Today’s recipe is a good piece of pantry worship. I originally created this dish because I didn’t want to put on “real” pants and haul my butt to the grocery store. I also didn’t want to surrender to takeout for the second time in a week. So I scoured my cupboards and emerged with beans, pasta, and a tin of tomatoes. And well, today’s Butter Bean Bucatini was more or less willed into existence.

People often ask me about my favorite foods and restaurants. The moment they find out what I do, I am immediately asked what my favorite pie, Italian restaurant, and/or cocktail is. And my answers are always halting, vague, and laced with caveats. I can’t help it. For me, my favorite anything has so much to do with context. Are we talking lunch or dinner? Upscale or guilty pleasure? What neighborhood am I in? How tired am I? Who am I with? All of these are factors when I decide what I want to eat and drink and where I want to do it. But when it comes to the inevitable pasta question, I always have my answer at the ready because that answer never changes. My favorite pasta is Pasta Alle Vongole. The worst form of precipitation has hit my corner of the world. Frigid rain has been falling at a near-constant rate these past few days. I feel like dry socks are a distant memory at this point. Is there anything worse than cold rain? I mean, I get that shoveling snow is a bummer. But you can still play in the snow. But cold rain? Well, I don’t know anyone who plays in that and I’m not sure I want to. Cold rain is just miserable, plain and simple. And it’s probably what mother nature has in store for us for the foreseeable future. So it’s time to break out the comfort food big guns. It’s time to mix up this Blistered Shishito Mac and Cheese.
