I’m not the biggest dessert person. Sure, I like the odd slice of pie and summer just isn’t summer without a s’more or two. But my sweet tooth is fairly chill most of the time. And when it kicks up I tend to go for treats with a savoury edge. This may feel like a prelude to a dessert recipe but it’s not. Today’s Boursin No-Bake Cheesecake with Pickled Vegetables is very much a lunch option but it does appear in a dessert-like format. So what are we looking at here? This Boursin No-Bake Cheesecake features a crisp base of crushed wheat crackers accented with brown sugar and dried mustard topped with whipped cream cheese and Boursin filling decorated with ribbons of lightly pickled vegetables. It’s basically a giant cracker with cheese but you know, fancy.

Easter is here and we have little to no plans, which is exactly how I like it. Nice and low-key with a quiet dinner at home. But just because we’re keeping things chill doesn’t mean we can’t have a lavish dessert. Well, maybe “lavish” isn’t the word for this particular cake. Loud and obnoxiously joyous is a little more fitting. But before we get to the vibrant decor, let’s talk about the cake itself. This is a Malted Snack Cake with Salted Vanilla Buttercream. The cake is spiked with chocolate Ovaltine powder and topped with a simple vanilla American buttercream dyed in a shouty, springy array of colors. The cake is finished with Whopper Easter eggs and cape gooseberries for a little extra whimsy. Sound good? Good! Let’s make it!

I know I’ve mentioned this before but I’m not much of a Halloween person. It’s not that I dislike the holiday. I kind of enjoy the energy of the day in general. It’s just that I don’t have many ideas surrounding it. I’m hopeless when it comes to costume concepts, I can’t plan a Halloween party and make it somehow different from a regular party, and I have next to no recipe ideas. Spooky treats are the furthest thing from my mind it seems. So today’s Blackberry Blackout Cake is more of an attempt at a Halloween-friendly dessert. How successful I was is really up to you. But I can assure you this cake is very delicious, very chocolatey, and gorgeously balanced. So while this may not be a Halloween cake, it is at least a delightful cake.
