Here we are on the doorstep of Easter again. And once again, we’re all stuck on our own separate doorsteps. If you live in the States where vaccines flow freely that may no longer be the case. But here in Toronto, Canada our cases are going up and our actions are still heavily restricted. So another Easter weekend with my partner and two cats as my only dinner guests. So naturally glazed ham is off the menu. And as much as I love ham, I’m okay with that. I actually enjoy cooking intimate dinners more than big blow-out feasts. When cooking for small crowds, you can limit the number of dishes and focus on the execution of the food you do make. But having said that these Apricot Lamb Meatballs with Avgolemono Sauce aren’t overly detailed, so you can bank that spare fussing time for dessert.

We’re knee-deep in snow, so we might as well be knee-deep in soup season. I know my stockpot has been getting a workout these past two weeks. And if your backyard looks anything like mine, I think you should follow suit. It’s wall-to-wall snow in this city of mine and I am feeling all the claustrophobic feels. But I have found in my thirty-something years living in Canada, that having a pot of something good simmering on the stove, can really take the edge off. But cabin fever edges – particularly pandemic cabin fever edges – are sharp, so it pays to bring out the big guns. And by “big guns” I mean this Chicken Parm Meatball Soup.

This past week we had our first blizzard. Yes, I know, it’s the last day of January. We have been truly spoiled in terms of winter weather. It’s been fairly dry and mostly mild, which is not generally what anyone thinks of when they think of Canada. The lack of snow has been good for the state of my winter boots and has saved my shovel of some wear and tear, but it has also wreaked havoc with my winter cooking plans. You see, there are a few things that I curiously never crave unless it resembles Siberia outside my window. Baked pasta is one of those things. Before we go any farther, I should tell you there is no meat in these “meatballs”. Yes, I know. Two vegetarian recipes in a row. No, I haven’t converted to a meat-free lifestyle. I’m still rocking the four veggie nights a week while hatching a Christmas plan that will likely include a porterhouse. I wrote extensively about my food philosophy in my last post, so I won’t get into it again today. But what I will do is tell you how freakin’ excellent this Spaghetti with Lentil Meatballs truly is. Yes, really. Yes, I know the name sounds like a sad vegan food joke from a 90s sitcom. But in spite of its descriptive name, this dish is not severely lacking in joy. Quite the opposite. I think it’s quite exuberant and I made a video to prove it to you.
