It’s officially October and I’m officially putting squash in everything. I know some people are averse to this practice but I don’t care. I love the fall and all its trimmings. This is the only time of year that I actually feel enthusiastic about squash. Sure, I eat squash all year round but there’s something about October that makes it seem downright magical. Maybe it’s the nostalgia around pumpkin pie or the welcome return of cozy meals. But the second October hits, I start making things like this Butternut Penne Alla Vodka.

Pasta is not a seasonal food. Pasta is an all the time food. Sure, you might not drench it in ragu in the middle of July, but you’ll definitely pair it with bocconcini in a salad. And seafood pasta dishes were made for patios and beer and white wine. Pasta always has a place at the table, but fiddly pasta? Well, that’s a tougher sell. I know the thought of spending time in the kitchen is less than ideal when summer is underway, but I truly believe these Ricotta Agnolotti with Sautéed Fiddleheads are worth the extra time indoors and I intend to prove it to you. You can eat them al fresco and I promise that cold white wine you pair them with will taste all the sweeter.

Summer arrived in an instant here in Toronto. Earlier this month we saw snow and now we’re waking up to temps in the mid-teens (Celcius) and comfortably reaching daily highs in the mid-20s. And with the sudden appearance of, dare I say, summer, comes a radical shift in the palette. Gone is the desire for soups, stews, and hearty meat-riddled pasta. In its stead is the nagging need for salads, popsicles, and various grilled vegetables and meats. And today I’m feeding one of those seasonal cravings with this Tortellini White Bean Salad.
