I want to start today’s post off with an apology. I’m sorry for the recent lag in content. I generally plan a lot of recipes in advance, but the COVID-19 crisis made quick work of those plans. So, I’ve been rebuilding my content calendar from the ground up. And now, I have the added challenge of limiting the ingredients in my new recipes to what I have on hand. Every year, when we near the end of February, I feel at once excited and disappointed. On the one hand, my least favorite month is done and dusted. But on the other, there’s still March and, in some ways, March can be much worse. In March, you have the expectation that the weather will be on an upswing. But anyone who’s lived in Canada will tell you, March can be a full-on winter month. Heartbreaker, that’s what March is. And since this is the month we’re embarking on and it’s currently snowing like all-get-out, let’s find solace in carbs, shall we? This pan of Mini Meatball Cannelloni should do quite nicely.

So here we are at the end of another decade and it’s hard to believe it. Or at least it’s hard for me to believe it. Perhaps you’re limping out of this past decade and feel like the next has been a long time coming. But for me, it’s a little bit of a shock. I will admit it has me feeling a touch old. But at the same time, I know I wouldn’t trade where I am at the end of 2019 for where I was at the end of 2009. So, I’ll take the extra 10 years and toast them with a glass of bubbly and a bowl of this Shrimp Rigatoni with Crab Vodka Sauce.
