My house has been converted into a pub. It’s also assumed the role of a taco stand, transformed itself into a noodle bar, and delivered its best impression of a high-end bistro. And just this past week it did its very best to convince me it was a pizzeria and although I’m not particularly gullible, I almost believed it. That probably had less to do with the candlelight and more to do with this Sausage Rapini Skillet Pizza. This pizza was so decadent that I legitimately felt like I’d had a night out after I ate it. The only difference was I didn’t require an Uber in order to crash land on my bed. Yet another weird quarantine perk.

Can we make Tostada Thursdays a thing? I mean, if tacos can conquer Tuesdays, why can’t Tostadas rule Thursdays? Tostadas may not be as familiar as the ever-popular taco, but they are just as good. And I’m sure this whole Taco Tuesday phenomenon is doing nothing for the tostadas’ self-esteem. Sure, tostadas are traditionally made with day-old tortillas and yes, they are not exactly an eat-with-your-hands-friendly snack. But they are capable of just as much deliciousness as their taco brethren. And as evidence of that fact, I put forward these Sticky Chicken Tostadas with Smoky Pepita Spread. Deconstructed. The word makes me wince. Think of how many Deconstructed Somethings you’ve seen floating around Pinterest and Instagram. Many of them are designed to side-step technical difficulty (re: Sushi Bowls), which I don’t have a problem with. Not everyone has the deft hand or equipment required to recreate a favorite dish at home. No, what I have a problem with is the deconstructed dishes that act like they’re moving the ball forward. Okay, I’m about to wade into dangerous territory. Pineapple on pizza. Delicious? Gross? Depraved? Today’s Hot Hawaiian Pizza should give you a clear idea of where my allegiances lie. There are a lot of feelings surrounding this issue. And honestly, the passion of those opposed to the fruit’s fraternization with pizza has kind of scared me into silence, but no more. I believe that as long as pork products belong on pizza, pineapple has a place there too. Pineapple and pork are in a committed, long-term relationship, where pork goes so go the pineapple. BUT, having said that, there is a right way and a wrong way to invite fruit to your pizza party. This Hot Hawaiian Pizza is, in my opinion, the best way to eat pineapple on pizza. Let’s dive right in, shall we?
