Of all the tortilla-related formats, I think the tostada is the most underrated. It doesn’t make a whole lot of sense to me. Pizza is almost universally loved and a tostada is essentially a crisp thin-crust pizza. And it’s naturally gluten-free. The tostada should be a slam dunk for the North American market. But tacos reign supreme in my neck of the woods. And I don’t have a problem with that. I love a good taco as much as the next girl. But I do believe the tostada genre deserves more recognition. Sometimes creating a tasty piece of fusion is as simple as popping one dish on top of the other. While I’m not inclined to rob myself of praise, today’s mashup was really a no-brainer. Çilbir (Turkish Eggs) perched on top a golden potato rösti? Why wouldn’t you want something like that? I’m only surprised I haven’t seen it before. It is the perfect brunch food. Golden crispy potatoes to soothe any potential hangovers, delicately poached eggs with runny yolks, paired with the enlivening sharp tang of yogurt. This is the stuff brunch dreams. Oh and there’s chili butter! Yeah, you’re going to need this Cilbir Potato Rösti in your life.

I’m going to be upfront. Today’s Chili Confit Black Cod is not for the faint of heart. It packs a punch in terms of heat, so if you’re heat averse you may want to look away. If, on the other hand, your hot sauce collection can only be described as “sprawling”, stayed tuned, this fish is for you. But even if heat isn’t your thing, there is still plenty here for you. The toasted gnocchi with burst cherry tomatoes, for instance, won’t inspire perspiration or tears. I also have a few ideas on how you can reduce the spice level to something more manageable.
