These Lamb Kofta Hoagies were supposed to be meatball subs. Yes, I know. It’s a long walk from there to here. But there are a host of good reasons why a plain old meatball sub didn’t make the cut. I’m sure the knee-jerk reaction is to assume, the meatball sub is not fancy enough for me. That’s not true. I have plenty of what I suppose you could call “low-brow” cravings and I indulge them frequently. Perhaps the meatball sub is too pedestrian and overdone? Well, that is sort of true. I don’t like to give people more of what they are currently swimming in. And there are meatball recipes abound. But I created the series Overthinking Classics as an outlet to play with my favorite dishes, which are actually super commonplace. So I don’t always consider being overly familiar a con.

Today’s Coconut Cream Pie is the first installment in what I hope will be a long-running series we’re calling Overthinking Classics. Most of the recipes that appear on this blog strive to be different, which is great. But in my day-to-day life, my cravings tend to be rather pedestrian. I have a lot of love for classic dishes and I think about and cook them often. And every time my brain picks them up, I try to improve upon them. They never find their way here, though. I always think they aren’t interesting enough to be blog-worthy fare. But I hope this new series will give a home to all the pearls of wisdom I have accumulated about the dishes we know and love.

It’s been a week. I’m sure I don’t have to tell you why? I’m sure your stress levels are also high and your spirits low. But hey, we’re surviving even if we’re not necessarily thriving. I’m not ashamed to say I’ve leaned on comfort food quite a lot this past week. I submit my previous post for Chili Fries as evidence of this. So, as this emotionally draining week drew to a close, I actually found myself craving a salad. And I’m pleased to say, this Chickpea Pita Salad with Sweet and Sour Date Vinaigrette was exactly what my overwrought nervous system wanted and needed.

If there’s one thing you can learn from today’s Kale Caesar Flatbreads it’s this: Salad is better when served on bread. I know, it’s not really a shocking discovery. Bread has a tendency to make everything better. But this recipe is not all about the bread, although it is spectacular. What you are looking at here is a fluffy flatbread topped with baby kale coated in a whipped feta caesar dressing topped with blood orange, thin slices of red onion, and marinated white anchovies. This is the stuff of dreams…well, my dreams at least. So let’s get into it.
