On Instagram, I described today’s Garlic Labneh Flatbread as a clean-out-the-fridge meal. What I failed to mention, is my fridge is not like other people’s fridges. I’m not saying that to be a snob, I am merely pointing it out. It’s not uncommon for me to have garlic confit on hand because my job requires me to make such things. I’m not over-the-top organized by nature, and if I weren’t frequently paid to develop and shoot recipes, I would have such things at my fingertips. The outside world may be transforming into a beautiful yet inhospitable place, but all those frosted toes and damp clothes make dishes like today’s Sweet and Sour Pomegranate Meatballs taste that much better. Nothing like a side of suffering to make comfort food all the more comforting.

Welcome to my new favorite comfort food – K-Mex Beef Quesadillas with Avocado Crema and Pickled Radish. These bad boys are the direct result of a takeout-oriented fever dream. I’ve never been particularly reliant on fast food, but as more and more restaurants shutter in these bizarre times, I find myself craving it more and more. But luckily, I am perfectly capable of fixing my own problem. And that, everyone, is why being a competent home cook is a little like being a magician. Anything you crave is well within your capable grasp.
