So here we are – the last long weekend of the summer. It’s been a bizarre summer, to say the least, but I still managed to sip a few cocktails outdoors, grill to my heart’s content, and swim in a large body of water. Sure, I didn’t see as many friends as I would’ve liked and I didn’t get to visit my family in Nova Scotia. But even with the drawbacks bought to us by COVID, this summer has been pretty ok. But I will confess I am excited for running without oppressive humidity and mugs of mulled wine. There is a lot to love about summer and there’s a lot to love about fall. So instead of mourning the summer that was, I’m going to give it a proper send-off with a platter as exuberant as it was. Say hello to these Everything Bagel Pretzel Dogs.

I know everyone is jumping into Back to School season with both feet but I’m not done with summer. As long as heat warnings remain a constant in my life so too shall ice cream. So while it’s usually best to stay ahead of the curve in the content creation game, autumn is a curve I don’t mind being behind. Even when I’m suffering from heatstroke or sporting a particularly painful sunburn, you won’t find me wishing the summer away. And why should I? There’s still plenty of summer left in this calendar year. So let’s make this Blueberry Cornbread Ice Cream while the sun shines – the pumpkins can wait.

I know including fruit in savory recipes can be a contentious issue. Some people are dead set against it and passionately so. And you know, that’s their right. You can find disgust where ever you see fit – I’m totally fine with that. But I also have the right to completely and totally disagree with those people. I love fruit in savory things, from pineapple on my pizza to grapes in my chicken salad. And if that makes you wrinkle your nose or viciously question my taste, I’m cool with that because I don’t care. It just means more Sweet Cherry Bruschetta for me.

Blistered Cabbage Skillet Cornbread

The weather is not cooperating. I know, I live in Canada, I should be used to that by now. But it’s nearly the middle of May and we’re still talking about wind chill. If you live in a warmer climate, allow me to make this real for you. I wore a winter coat and took a walk in the snow yesterday. And contrary to popular belief, this is not normal for Toronto. We do not live in igloos and conduct business in ice castles. So yeah, I’m not impressed. But I’m also quick to remind myself that even when we have an uncooperative spring, it always gives way to summer. And it is with this happy thought in my head that I present to you this Blistered Cabbage Skillet Cornbread because BBQ season has got to get here eventually.
