It’s been a while since I posted a brunch recipe. Figured I should fix that. To be honest, in this era of flexible routines and ambiguous WFH schedules, breakfast foods have fallen to the wayside. What has replaced them is low and slow, simmer-all-day affairs, and generally, I’m not mad about it. But I do love breakfast foods and this past week I felt a void that could only be filled by a plate of fried eggs. It was my over-active brain that chose to complicate things. It may only be Wednesday but I’m already thinking about the weekend. And nothing screams “weekend!” more than an elaborate brunch and acres of time in which to consume it. A mimosa helps too but I suppose it’s not mandatory. So even though its Wednesday, I urge you to conjure up a Saturday or Sunday-like attitude. These Cheesy Grits with Roasted Oyster Mushrooms deserve that. They’re far too good for a mid-week nosh, so please, delete hump day from your mind and pretend your on a seaside deck with nothing but the water and a blissfully blank schedule stretching out before you.

Vegetarian Breakfast Burritos with Potato Lentil Fritters

I know these Vegetarian Breakfast Burritos in no way resemble high-tea-fare, and yet I am putting them forward as a potential Mother’s Day brunch idea. I know, I’m so controversial. I’ve always found the difference between “Mother’s Day Food” and “Father’s Day Food” to be out-and-out hilarious. Only mothers could possibly enjoy the likes of lemon curd, smoked salmon, and peeled asparagus spears. And fathers? Well, that meal had better involve beer, pretzels, and a rack of ribs. How else would you know it was for dad?
