I get strangely anxious about recipes during this time of year. One side of me wants to leap into fall recipes head first because, after a summer of popsicles, they feel novel. But the other half of me, the half that pays attention to the calendar, knows it’s still summer. And there is no greater sin a Canadian can commit than ushering summer out the door prematurely. So what’s a girl to do? Keep on posting summer-friendly eats until the 21st? Or start cooking for the sweater weather ahead? How about both? Yes, both! Today’s Dark Chocolate Port Torte with Malted Whipped Cream is a delicious compromise designed to placate my opposing sides. It’s a long weekend here in Canada, so Toronto has emptied out. It seems everyone in our neighborhood has embarked on a kayak adventure or returned to a cottage. And we, lacking both, have done neither. Instead, we’re getting reacquainted with the lawn chairs that live in our backyard. And no, I’m not bitter about it because we’ve turned it into a full-on party complete with cake. This Rainbow Sherbet Funfetti Cake to be exact. And this cake is nothing if it’s not a party. This cake is so cheerful it makes me completely forget about my lack of kayak. Throw in a cooler full of beer, a good book, and something cooking low and slow on the BBQ, and my backyard is basically cottage country. Oh, and my neighbors are all gone, so its blissfully, if not eerily, quiet. Staycationing has never looked so good.

Canada Day is at our doorstep and boy, does it ever feel like it. Some years Canada Day can be a rainy bummer but this year, at least in my neck of the woods, it’s going to be an absolute stunner of a day. Sunshine, heat, and the high probability of a sunburn – just like the Canada Days of my youth. And to further my current nostalgia, I decided to whip up the perennial Canada Day favorite – Strawberry Shortcake. You got to love it when a good, much-beloved dessert is unintentionally patriotic. Of course, I couldn’t keep it entirely classic because then I wouldn’t be me. So instead I offer this Grilled Angel Food Cake with Pimm’s Macerated Berries.

Yes, this is a Toasted Fluffernutter Sheet Cake. Yes, like the official sandwich of Massachusetts. And yes, the fluffernutter is the official sandwich of Massachusetts. I looked it up. The fluffernutter sandwich gets a lot of flack due to its use of bottled marshmallow cream and utter lack of nutrition. And yeah, okay I can see where people are coming from. Marshmallow cream is generally not part of a high-brow balanced breakfast. But what if you swapped the processed cream for the more respectable Italian Meringue and moved the peanut/marshmallow pairing to a more suitable time of the day, i.e. dessert? Not so trashy afterall.
