A traditional alfajor cannot be improved upon. Alfajores are, in my opinion, the perfect dessert. They have melt-in-your-mouth cookies, a creamy, complex, and gooey center, and they can be rolled in shredded coconut. Essentially they pluck at all my heartstrings. So you may be wondering why I would ever choose to alter them. Well, it’s certainly not to elevate them, as I mentioned above, this South American delicacy is the pinnacle of cookie perfection. I decided to introduce s’mores to the classic alfajores because I thought it would taste good. Seriously, that is the only reason. And you know what? I was right. But do these S’more Alfajores beat out the original? No, I wouldn’t say they’re better, they’re just different and variety is the spice of life.

If you spend any amount of time poking around this blog, you’ll find there aren’t many cakes here. Actually, you’ll find there aren’t that many dessert recipes period. The truth is I’m no prolific baker. I find the activity rather stressful with a high degree of difficulty. But the desire to be better is always there. And as a person who enjoys aesthetics, I do feel a real desire to make beautiful desserts. So, every now and then, I try my hand at a layer cake to see if I’m just as clumsy as I was before. And with today’s Midnight Cake with Dark Chocolate Fig Ganache, I do feel like I’ve leveled up…maybe to, like, a green belt? Or is that really high? I never took tae kwon do.

When March 17th hits I’m generally too preoccupied with emerging from my winter-induced depression to even start thinking about merriment. Does anyone remember these vibrant Matcha Cream Tarts from last year? The recipe I intended to be a St. Patty’s Day delight but I posted them, like, three days late? Yeah, not the best track record. Well, we’ve finally seen the back of February and I’m quite literally crawling into March. I got walloped by a cold in the final days of the month which is why today’s recipe is a few days overdue. I want to feel the hope and jubilation surrounding the end of the worst month of the year, but honestly, this cold, in addition to zapping all of my energy, has given me the worst case of the blues. So, no I can’t quite turn my attention to the bright hues and promise of spring. I’m still very much in bitter hibernation mode. At this point, the only way to soothe my internal beast is with vats of Earl Grey Hot Chocolate and Cardamom Marshmallows.
