Today is Robbie Burns Day and in honor of this occasion I’m serving up trifle Scottish-style. Now, this particular breed of trifle is called Tipsy Laird. It is similar to the British trifle in terms of structure but it uses different, more patriotic ingredients. Instead of sherry, Tipsy Laird uses Drambuie and for the fruit, only Scotland’s finest raspberries need apply. Now I will go into detail about both of these ingredients and their importance but I think we should start at the beginning and first discuss the reason for the trifle – Robbie Burns Day.

Behold! A coconut-coated sugar bomb. A blizzard of a cake. An edible pompom, if you will. During its construction, I affectionately called this cake “Snow Beast”, which is fitting if not appetizing. Its official title is Raffaello Angel Cake with Salted Almond Cream, which is much more respectful and descriptive than its playful moniker. But it will always be Snow Beast to me.

If you spend any amount of time poking around this blog, you’ll find there aren’t many cakes here. Actually, you’ll find there aren’t that many dessert recipes period. The truth is I’m no prolific baker. I find the activity rather stressful with a high degree of difficulty. But the desire to be better is always there. And as a person who enjoys aesthetics, I do feel a real desire to make beautiful desserts. So, every now and then, I try my hand at a layer cake to see if I’m just as clumsy as I was before. And with today’s Midnight Cake with Dark Chocolate Fig Ganache, I do feel like I’ve leveled up…maybe to, like, a green belt? Or is that really high? I never took tae kwon do.

It’s been a hot minute since I posted a dessert. Yeah, sorry about that. Hopefully, today’s Bananas Foster Tart will get your sugar levels back where they ought to be and more than make-up for my dessert-related-negligence. I mean, this tart is essentially two desserts in one. There’s the base tart, which is a cardamom-heavy-riff on the classic British egg custard tart. And then there’s the topping – a faithful recreation of Bananas Foster, the quintessential New Orleans dessert rivaled only by the beignet in terms of popularity. So yeah, I’m gonna guess this tart alleviates any lingering feelings of resentment. We cool?
