It’s not that this Saag Paneer Dip is difficult, it’s not. But it can be fussy, or it could not be. Allow me to explain what I mean by that. This recipe can be very easy or very difficult depending on your mood. If you’re feeling your gourmand fancy, you can make the paneer and the naan from scratch and milk cooking this recipe for a day or two. Toronto is a snowbank. Yes, that is an exaggeration, but only just. We’ve had snow pretty much every day for the past five. I know most of North America has had, um, “interesting” weather this week, so that’s why I’m bringing you something cozy. And it doesn’t get much cozier than a baked potato unless, of course, you stuff it with chili. What I love most about these Chili Stuffed Sweet Potatoes is they give you a warm fuzzy feeling even while you’re making. I don’t know about you, but I think any frigid day without a pot of something delicious simmering on the stove is a missed opportunity. So let’s not let the silver lining of this extreme weather go unclaimed.

Cold weather has finally hit here. It took a good couple of months to show up in earnest, but it seems to have settled in for the long haul. Unfortunately, or fortunately depending on who you ask, this cold spell has not resulted in much precipitation. I like active weather, it’s a hangover from my Maritime upbringing. I’m not really about that cold but sunny life. I want blizzards. I want that cozy feeling of looking out the window and seeing the full force of winter while I stir something comforting on the stove. But the weather so far has only obliged me once. So without blizzards, I will have to make do by stirring something comforting without the theatrics. And today that something comforting is this Gochujang Congee with Shredded Tofu.

Have you ever fallen hard for a recipe? You know, a dish that you cannot stop making? I recently fell for a new one and in the year that I’ve known it, I’ve made it six times. And for me, that’s saying a lot. I generally only make recipes once before moving on. I get distracted so easily when it comes to food. I’m not particularly good at following recipes either, I can’t help but riff. Yet another side effect of my short culinary attention span. But last year I made Pups with Chopsticks’ Peking Chicken recipe and I was instantly smitten. I didn’t even pause to riff. I just made it. But then I made it again and again and finally the riffing started. These Lacquered Sesame Chicken Bowls with Asian Pear are the result of that riffing.
