These Blistered Jalapeño White Bean Enchiladas were almost mac and cheese. Yes, when I first envisioned a cheesy, jalapeño-flecked cream sauce, I thought it was destined for a pot of tubular pasta. But when I got to the other side of the holidays, I found myself pasta-ed out. I do find it interesting that I was still game for cheese, in spite of inhaling quite a bit of it during the month of December. Clearly, when it comes to cheese consumption, I was built to persevere. But pasta and I needed a hiatus, so enchiladas it was. I have no doubt pasta and I will be reunited shortly.

In this post, you will find three, yes three, recipes. It was a monster of a post to shoot and write and for some reason, I felt compelled to turn it into an Insta reel as well. There is snow on the ground and holiday lights on my house, which means it is finally acceptable to eat my weight in comfort food. Okay, so maybe I do that all year round. But there is something far more satisfying about tucking into a bowl of cozy deliciousness when your cheeks are stinging from the cold. The outside world may be transforming into a beautiful yet inhospitable place, but all those frosted toes and damp clothes make dishes like today’s Sweet and Sour Pomegranate Meatballs taste that much better. Nothing like a side of suffering to make comfort food all the more comforting.
