And just like that, we’re on the doorstep of Canadian Thanksgiving. This holiday always sneaks up on me. One day I’m sipping rose on a patio and seemingly overnight I’m on the hunt for Brussels sprouts. But this year, Thanksgiving really took me by surprise. COVID has been messing with my sense of time all year, why would October be any different? I wish I could say this year’s Thanksgiving will be a holiday as usual. But it won’t. Our case counts are on the rise and we’re being told to limit our dining plans to our own households. No one will be traveling and there will be far fewer mouths to feed turkey to. Consequently, people are on the lookout for smaller festive meal ideas, so I’m happy to add to the din with this Spatchcock Cornish Hen Tray Bake.

There was a time when planning Christmas dinner was a straight forward affair. You’d order the turkey, pick up a big bag of potatoes and quibble about what kind of stuffing to make. Well, it’s simply not that simple anymore. Our holiday tables have never been so diverse. Almost everyone I know has a vegetarian or vegan coming to dinner. And you know what? I’m all for it. I don’t think that making a dietary choice, moral or otherwise, should isolate you. On the flip side, I do feel for the omnivorous host who may find themselves short on veg-heavy ideas. So, I give you this Curried Lentil Pot Pie to make the season less confusing and far more merry and bright.

Behold! A coconut-coated sugar bomb. A blizzard of a cake. An edible pompom, if you will. During its construction, I affectionately called this cake “Snow Beast”, which is fitting if not appetizing. Its official title is Raffaello Angel Cake with Salted Almond Cream, which is much more respectful and descriptive than its playful moniker. But it will always be Snow Beast to me.
