I’m going to level with you, this is not the stuff of a chill Taco Tuesday. This is date night material. A legendary Cinco de Mayo meal. A lazy Sunday well-spent in the kitchen. These will take some time to put together with an ample amount of downtime. In other words, have your laundry ready because you’ll have plenty of opportunities to fold those socks. But for all the patience and attention these Beer-Braised Short Rib Tacos require, they more than makeup for it with their flavor.
There are few lunch items in the world that can rival the perfection that is a PB&J sandwich. Something so simple and so beloved, almost every person on the planet has had one and loved one. Except for those born with a nut allergy – my condolences by the way. I count myself among that many that love this classic sandwich. But my reverence doesn’t stop me from messing with it. PB and J is a fun combo of the flavors that are compatible with most dishes. Particularly if those dishes are of the dessert persuasion. So without further ado, allow me to introduce what I believe to be the happiest home for peanut butter and jelly – the PB and J Silk Pie with Oreo Crumb Crust.
The past couple of years April showers have been showing up in May. Not a complaint – just an observation. But regardless of when the rains arrive, one thing is for certain – spring is a messy season. But you can’t really tell that from the food. Peruse the Internet for spring recipes and you’re liable to find vibrant pasta dishes, exuberant salads, and even the odd grilling recipe. But one thing you won’t see a whole lot of is soup. Sure, there may be the odd brothy bowl but thick, stick-to-ribs stews? Not so much. And I just think it’s a shame. Here in Canada, springs are not the warmest, and what is worse than cold rain? Not a whole lot. So I gift you this Golden Chickpea Stew because let’s face it, it’s not summer yet.
Today’s Honey Habanero Shrimp offers a fiery take on the classic shrimp scampi. Served on a bed of fluffy and flavorful rice pilaf, accented with tarragon and toasted orzo, this meal boasts a contrast of bold and nuanced flavors. And it’s simple, like, weeknight simple. And very spring-friendly. Temperatures haven’t quite hit spring levels in my neck of the woods. Sure, we’ve had some lovely days, but we also had snow last week. So my palette is ready for lighter fare, but shifting weather has me looking for comfort. This dish strikes the perfect balance between cozy and fresh.
