Every year I put together a multi-course Christmas menu centered around a specific theme. Last year it was Chinese takeout meets traditional festive feast and it featured dishes like Char Sui Squash and Brussels Sprout Egg Rolls. This year I’m going back to my roots…well sort of. This year’s theme is seafood. In particular seafood from the East Coast of Canada. Every dish features jewels from the Atlantic with the exception of dessert because well, that sounds gross. I will be expanding the menu this year to include a couple of dishes that are ideal for ringing in 2022 as well, so if you’re not a seafood fan, this isn’t going to be a great month for you here. But if you’re a salty dog, like me, welcome to heaven. First up, Fried Oyster Sliders.

I know it’s not Tuesday, but I have these Maple Habanero Squash Tacos. And are you really going to deny them for the sake of an alliteration? I’m not. I’m not bound to food holidays. I like to live my life on the edge, so yeah, I’ll eat a taco on a Wednesday, tuck into one on a Sunday, and yes, even chow down on a Thursday – Tuesday’s natural enemy. I’m not exactly sure why I think those days are enemies, it just feels right. And yes, I agree this intro is fairly unhinged but I promise these tacos are not. Buttery squash wedges glossy with a maple habanero glazed tucked into warm corn tortillas and finished with a blistered jalapeño crema. There’s no way to say no to these any day of the week.

These Lamb Kofta Hoagies were supposed to be meatball subs. Yes, I know. It’s a long walk from there to here. But there are a host of good reasons why a plain old meatball sub didn’t make the cut. I’m sure the knee-jerk reaction is to assume, the meatball sub is not fancy enough for me. That’s not true. I have plenty of what I suppose you could call “low-brow” cravings and I indulge them frequently. Perhaps the meatball sub is too pedestrian and overdone? Well, that is sort of true. I don’t like to give people more of what they are currently swimming in. And there are meatball recipes abound. But I created the series Overthinking Classics as an outlet to play with my favorite dishes, which are actually super commonplace. So I don’t always consider being overly familiar a con.

There was a bite in the air this morning and consequently, there will be tea in my cup all day long. Winter no longer feels like some distant nightmare. And this is all fairly jarring considering it’s been plus 20°C for most of the month of October. I’m not a fan of winter, it’s well-documented on this blog. But I do love the cozy season for one reason – the food. I adore dead of winter fare. Mostly because it’s carb-heavy and carb-heavy is my preferred diet. So if I can wrap whatever I’m eating in some kind of bread, I can and I will. And I plan on doing that, without apologies, from here to March…and potentially April and May. I do live in Canada after all. So let’s kick this carb-fest off with these naan-swaddled Tandoori Pumpkin Paneer Wraps.
