Hey, so quick question: Did Easter sneak up on anyone else this year? One minute your making heart-shaped everything, the next you’re trying to justify that last handful (!) of Mini Eggs. But then again, how often does Easter happen on the first weekend of April? I was so clueless about Easter’s early appearance that I accidentally booked a vacation to Mexico during it. Yes, I’m writing this from Tulum. Don’t worry, I haven’t locked myself in a hotel room. I am indeed outside taking full advantage of the vitamin D. But I had to pause to share these Braised Mushrooms with Mozzarella Polenta with you because you probably have a holiday dinner to plan. I don’t, so I have excess menu-planning energy.

A veggie burger is a peculiar thing. Sure, it comes in the form of a patty and it’s typically served on a bun, but it’s not really a burger. Well, let me walk that back a bit, a lot of veggie burgers aren’t really burgers. Some veggie burgers (often made with tofu or tempeh) do their darndest to approach the flavor and texture of meat. But most are made with black beans and chickpeas and sweet potatoes. They’re freaking delicious but you’re not liable to mistake them for ground beef. But still, we call them ‘burgers’ and by doing so we kind of set them up for failure.

Yes, I know it’s Saturday. And, yes, I am aware that this Winter Citrus Salad is, in fact, a salad. No, I’m not trying to make Salad Saturdays a thing. I promise I’m not a monster, I just happened to make a salad and it happened to be quite delicious and I thought you might be interested. There is also a chance I’m a touch hungover today, so vegetables are looking bizarrely appetizing at the moment. This is most definitely a sign of some sort of vitamin deficiency. Do you ever find yourself in a ‘break everything’ jag? No, I’m not referring to an over-the-top post break-up “Girl Smash!” mode or the super cute I-still-think-I’m-fourteen-style tantrum. I’m talking about those stretches when everything you touch seems to break. You get a saucer from the cupboard, it winds up on the floor. You pick up the apparently overloaded basket you used to store magazines, the handle unravels in your hand. You leave your favourite hat in a cab. And, to add insult to injury, you break your favourite bottle opener and your beer is trapped forever…Not really, where’s there’s a will there’s a way. When this type of bad luck hits you there really is only one answer: potatoes, the ultimate comfort food. And what should you do with said potatoes?
