I know it’s been a while since the last Overthinking Classics but the series is back and it brought a good recipe with it. Strawberry Rhubarb Pie seems to be a clear favorite among my friends and family. And it easily occupies a spot in my top three all-time favorite pies. Coconut Cream still reigns supreme but this ruby red stunner is forever nipping at its heels. This post includes a blueprint for a successful non-runny-or-gummy fruit pie filling, a solid all-butter pastry recipe, and a detailed (too detailed?) video that shows the entire baking process from tip to tail. Easter is fast approaching, so it only made good sense to do an Overthinking Classics on the unofficial dessert of Easter – the carrot cake. I have no idea why carrot cake has anything to do with Easter. Growing up we were far more likely to indulge in a lemon meringue pie and carrot cake was more of a birthday thing. But I suppose I do have an idea. It probably has everything to do with the Easter bunny. In the video below I do dip into the origins of the cake but I don’t talk about the more fanciful trappings of Easter. I really should’ve because this holiday is strange. Stranger than a portly guy shoving himself down a chimney? I would still say yes. A bunny, a mammal, who leaves eggs is hella weird. But that’s not why we’re here, let’s talk cake.

If you’re new here, and I think many of you are, Overthinking Classics is an ongoing video series where I develop a temporary obsession with a classic dish. I tend to do a lot of non-traditional dishes on this blog. But trust me when I say, most of my food cravings are as pedestrian as the next person’s. So Overthinking Classics provides me with an outlet to make whatever classic dish I happen to be craving that month. Oh, and I get to generally nerd out about each and every facet of that dish, which, I’m sad to say, qualifies as a very good time for me. And this month’s subject is Irish Soda Bread.
