There are few things I love more than a classic Caesar salad. But if you visit this website on a semi-regular basis, you already knew that. I play with caesar flavors a lot. Remember this little flatbread riff or this deeply satisfying kale version? I even gave the traditional dish the Overthinking Classics treatment. But today’s Tofu Katsu Caesar Salad is my current favorite. And it’s different from the rest because it is 100% vegetarian. This salad feature napa cabbage, bok choy, and yu choy dressed in a miso caesar dressing topped with a crisp tofu katsu and sprinkled with oyster mushroom “bacon”. I am head-over-heels in love with this salad, so let’s make it!

If you’re not much of a tofu fan, there is a chance this Hoisin Tofu Salad could change your mind. I am a huge tofu fan, particularly when it comes to extra firm tofu. It has a satisfying texture, is capable of taking on just about any flavor, and is as cheap as chips. Personally, I find it as satisfying as meat. And while that may not be true for you and is potentially blasphemous to suggest, I still think you’ll be pleasantly surprised by this tofu. Why? Because it’s hands down the best tofu I’ve ever made and I’ve made a lot of tofu. So if you’re game, let’s make it.

Does anyone else feel like they’re crawling out of the holiday season? Don’t get me wrong, I made merry with the best of them but I have to say, I missed my routine. Maybe it’s a sign of my rapidly advancing age but I do like my routine. My daily obligations help me feel balanced even when I’m not. And part of that balance comes from the food I eat. Now, don’t worry, I’m not going to say the D-word or spout a trite “New year, new you” mantra. I’m obviously not cutting carbs but I’m also not eating like every meal is my last. All the chocolate, roasts, and nibbles were fun but I’m more than ready to eat like a normal human again. And this Lemony Pearl Couscous is my first step in that direction.

The origin story of these Stilton Burgers is a long and frankly weird one. It involves a game my family invented where a crushed pop bottle is the ball. It’s best described as snow rugby but, um, with fewer rules. Yeah, it’s weird. Anyway, this was always the lunch of choice after our annual game. I won’t bore you with all the strange details. All you need to know is my family makes these burgers every year during the week between Christmas and New Year’s. Its primary function is to make use of leftover Stilton and to have an excuse to cook outdoors. Snowy picnics are rad in case you didn’t know.
