I’m back with another installment of my Overthinking Classics series. And today, I’m tackling what many North Americans consider to be the most iconic pasta dish of all time – Spaghetti and Meatballs. This dish has graced countless menus, found its way into the weekly rotation of numerous households, and even had a star-making turn in a Disney classic. Now, it’s always dangerous to meddle with a beloved classic such as this. And don’t worry, I believe that your Nonna’s is way better and I would love to try it. But this is how I like my Spaghetti and Meatballs. And if you have yet to swear allegiance to any particular rendition, this might be the spaghetti and meatballs for you. So let’s dive in!

Making a quesadilla for dinner is a lot like walking out of your pants the moment you step through the door – it’s bliss, a relief, a reward. Or at least that’s how I look at it. Quesadillas are a simple pleasure. They can be delicious with nothing more than cheese, or life-changing when more elaborate. And therein lies what I love most about the quesadilla, their versatility. You can stuff any sad thing for your crisper into them and transform it from yuck to yum. But today we’re not making quesadillas out of necessity, we’re making them on purpose. These Acorn Squash Quesadillas are far from flung together but they still feel carefree, fun, and most importantly, cozy.

I know I’ve mentioned this before but I’m not much of a Halloween person. It’s not that I dislike the holiday. I kind of enjoy the energy of the day in general. It’s just that I don’t have many ideas surrounding it. I’m hopeless when it comes to costume concepts, I can’t plan a Halloween party and make it somehow different from a regular party, and I have next to no recipe ideas. Spooky treats are the furthest thing from my mind it seems. So today’s Blackberry Blackout Cake is more of an attempt at a Halloween-friendly dessert. How successful I was is really up to you. But I can assure you this cake is very delicious, very chocolatey, and gorgeously balanced. So while this may not be a Halloween cake, it is at least a delightful cake.

Think of today’s recipe as the soup version of the classic Provençal dish Poulet à l’Estragon. Traditionally, the French dish is comprised of chicken parts, simmered in a lardon and mushroom sauce finished with creme fraiche and, of course, fresh tarragon. It’s easily one of my favorite dishes. Today’s Creamy Chicken Tarragon Soup is very much inspired by this timeless classic but it has a second muse: a can of condensed soup. Confused yet? Don’t worry, all will be revealed and no, no cans of soup were harmed in the making of this, well, soup. Let’s dive right in!
