In my neck of the woods, Thanksgiving is less than a week away and words cannot express how not ready I feel. I’ve complained about this a lot on this blog, but I don’t care, I’m going to say it again – Canadian Thanksgiving comes up way too quickly. I’m just not ready for the pumpkin pie of it all. But I will persevere and reacquaint myself with turkey brine. But before I get to the bird, there’s a little tradition I do on this blog every year. I give the holiday-loving vegetarians a meal option that doesn’t feel tacked together and isn’t just a plate of sides. This is a full-on main event designed to make omnivores jealous. If you read this blog you know I love a good leisurely cook. I’m sure some would rather call them “cumbersome” or “needlessly complicated” but I stand by the word leisurely. My recipes tend to celebrate the act of cooking, making a meal out of, well, making a meal. But when the summer hits that all goes out the window. If the sun is shining you will not find me assembling agnolotti. What you will find me doing is tossing protein in a hastily prepared marinade before abandoning it in my fridge. And from there the protein is grilled and served alongside a salad I cobbled together from things in my crisper and, hopefully, a glass of cold beer. It’s a whole different vibe. And today’s Sticky Chicken Thighs with Rice Noodle Salad fits very comfortably into that vibe.

I know spring has sprung but I live in Canada. Spring doesn’t really happen here until mid-April if we’re lucky. Sure, we have the odd good day here and there but a stretch of positive temperatures is not our current reality. And to make matters worse, I find I’m more prone to a chill during fake spring than I am when we’re in the depths of winter. It’s probably because every time the thermometer ventures further south than 5°C, I consider cropped jeans a sensible choice. They never are. By 5 pm the temperature plummets and I’m left with a pair of cold ankles and regret. That’s why I’m still stuck on cozy recipes like today’s Chicken Curry Pot Pies. These petit pies are powerful ankle warmers, and I’m speaking from experience here.

There are few lunch items in the world that can rival the perfection that is a PB&J sandwich. Something so simple and so beloved, almost every person on the planet has had one and loved one. Except for those born with a nut allergy – my condolences by the way. I count myself among that many that love this classic sandwich. But my reverence doesn’t stop me from messing with it. PB and J is a fun combo of the flavors that are compatible with most dishes. Particularly if those dishes are of the dessert persuasion. So without further ado, allow me to introduce what I believe to be the happiest home for peanut butter and jelly – the PB and J Silk Pie with Oreo Crumb Crust.
