Well, I guess it’s time to call it – I am a croquette addict. I can’t stop making them, eating them, thinking about them. What I love best about them is their versatility. They can take on just about any flavor profile you care to impose on them. They have a place in multiple cuisines, so it is well within the limits of “authenticity” to use far-from-home flavors and ingredients. The croquette, croquetas, korokke, etc. is truly a blank canvas ripe for creativity and adventure. Okay, maybe I’m overselling the croquette as a whole. But I am confident I am not overselling these Smoked Trout Croquettes with Beet Labneh. These beauties are a bright spot in the already gleaming croquette genre. So let’s make them!

I adore appetizers. It’s probably because I have the attention span of a gnat. I love small bites of many things. Committing to a full serving of anything sort of feels like settling. Especially when you have plenty of choices in front of you. I would rather order the full run of starters on a menu than a solitary main. And yes, I realize this is far from sane. Most people would rather have a ribeye than a side order of focaccia. But that’s not important. What is important is I love to design appetizers. Happy Friday everyone! Does anyone else feel like this Friday is particularly festive? I mean, it stands to reason that the Friday before a long weekend (Hello, Victoria Day!) should have a certain buzz about it. And then there’s some kind of wedding or something tomorrow? I don’t know, it’s *barely* been mentioned. So yeah, I guess I should expect this Friday to feel like a party. I mean, I did bring party food. How could it not feel like a celebration? Yes, these Sweet Pea Chorizo Croquettes are my humble contribution to this buzzy Friday. They’re adorable, crispy and addictive as all hell. Basically, they’re everything you want out of an hors-d’oeuvre or canapé. Plus, they have fresh peas! What better way to kick off summer than a bite that highlights the fact that things are growing again? This is a VERY big deal in Canada!
