We’ve got two Thanksgivings, a Halloween and Christmas/Hanukkah (Bae is Jewish) to contend with. So, limit your mindless grazing and ramp up your weekly km because things are about to get decadent ’round here. Case in point: this Molasses Apple Cake with Whisky Caramel and Cinnamon Marshmallows. Now, if you’re thinking that just sounds like three desserts stacked on top of each other, well, you’re *very right. It’s a delicious hot mess of a cake and you should take it as a warning. If you’re familiar with this blog, you know I don’t write a ton of dessert recipes. Generally, I throw in a little sugar every fourth or fifth post. It’s not that I don’t enjoy dessert, I do. But my bf and I are a little lacking in the sweet tooth department. And honestly, when the tooth does kick in, I’m content with a bag of wine gums. I do enjoy the activity of baking but I’m not a fan of the output, that’s why I tend to stick to savory things. We try our best to eat everything I shoot and we’re much better at doing that when copious amounts of butter and sugar aren’t involved. But every now and then I get an idea for a treat that I can’t ignore. A dessert that almost wills itself into existence. Today’s Strawberry Tres Leches Cake is one such dessert.

When you’re a child, Valentine’s Day is simple. Get a card for everyone in your class and it’s smooth sailing. If you want to up the anti, tape a mini chocolate heart to each Valentine and you’re golden. But somewhere along the way, this non-holiday holiday gets a lot more complicated. Around Jr. High the cinnamon heart eating contests give way to tears, embarrassment, and general bewilderment. But why? How can a violently pink holiday have so much sway over our health and well-being? It’s kind of bullsh*t, right? So, by way of half-hearted protest, the only thing I’m doing this Valentine’s Day is giving you these Victoria Sponge Cupcakes. I made them appropriately cute but that is all. I’m no longer engaging in this farce.
