I may have gone beyond the pale with this one. If you’ve visited this blog before, you know I love a good hybrid dessert. The recipe for these S’mores Alfajores is just one of many examples. But today’s Banana Split Pavlova Terrine borrows from 4 separate dishes. It’s one part Baked Alaska, one part ice cream terrine, one part pavlova, and of course, one part banana split. It is however entirely nuts. But hopefully, it comes across as nuts in a good way. This is a layered dessert, so it has many moving parts and it does require a little patience. I say this not to intimidate you because each step is actually fairly simple, but I would encourage you to start this dessert at least 3 days before you need it.

The sun has been eluding us lately. Aside from this past Saturday, it’s been nothing but cloudy skies and the occasional downpour. I’m not necessarily complaining. It’s far more favorable than the untenable heat and dry conditions affecting the country’s west coast. But still, long stretches of grey can make even the most optimistic of souls a little blue. And it’s July, the month I wait for all year. So to have crap weather at this point feels almost personal. But I refuse to feel hard done by. It’s a waste of energy especially when you can make your own sunshine in the form of this Raspberry Margarita Icebox Pie.

When it comes to dessert, I have terrible taste. And by “terrible” I mean trashy. Sure, I may make fancy desserts, but deep down all I want are wine gums. A bag of Sour Patch Kids is the fastest way to my heart. And for that reason, I don’t think I’m cut out for adulting. I seem to be downright rubbish at it. This year for my birthday, I classed it up a bit and ask for my weight in these fancy gummies in lieu of a birthday cake. But if I do find myself in the mood for a dessert that has actually seen the inside of an oven, 9 times out of 10 it will be a warm brownie situation. And these Hazelnut Brownies with Frangelico Ice Cream are the best warm brownie situation I could dream up.
