The weather is not cooperating. I know, I live in Canada, I should be used to that by now. But it’s nearly the middle of May and we’re still talking about wind chill. If you live in a warmer climate, allow me to make this real for you. I wore a winter coat and took a walk in the snow yesterday. And contrary to popular belief, this is not normal for Toronto. We do not live in igloos and conduct business in ice castles. So yeah, I’m not impressed. But I’m also quick to remind myself that even when we have an uncooperative spring, it always gives way to summer. And it is with this happy thought in my head that I present to you this Blistered Cabbage Skillet Cornbread because BBQ season has got to get here eventually.

I know these Vegetarian Breakfast Burritos in no way resemble high-tea-fare, and yet I am putting them forward as a potential Mother’s Day brunch idea. I know, I’m so controversial. I’ve always found the difference between “Mother’s Day Food” and “Father’s Day Food” to be out-and-out hilarious. Only mothers could possibly enjoy the likes of lemon curd, smoked salmon, and peeled asparagus spears. And fathers? Well, that meal had better involve beer, pretzels, and a rack of ribs. Kale is a polarizing green. Some despise it with every fiber of their being while others are almost evangelical in their enthusiasm for the plant. I am somewhere in between. I think there are a lot of leafy hearty greens that deserve our attention, so I don’t buy into the whole “kale is the ultimate fuel” mentality. Nor do I dismiss it as a fibrous, inedible mess. Kale, like most foods, has its time and its place. And today its place is in my Kale Caesar Salad with Marinated White Beans.
