Today’s Spicy Caesar Bucatini is, unsurprisingly, inspired by the caesar. The cocktail, not the salad. I took the tell-tale flavors of the Clamato-based drink and turned them into dinner. Imagine clams steamed in a blistered cherry tomato, horseradish, and vodka sauce tossed with chewy bucatini pasta. Oh! And as the name suggests, there’s a good amount of heat in this dish as well. While it may seem strange to use a cocktail as inspo for pasta, in this instance it works. And by “works” I mean, this dish is so delicious that I don’t care if it’s wrong. So let’s dive right in!

This is not a BBQ blog for one very simple reason, I am not a BBQ expert. I’m what you would call an enthusiastic amateur. I enjoy eating BBQ, I enjoy BBQing but I am still very much a novice in terms of skill. Mostly because when I do something good on the grill I struggle to replicate it. The season of potlucks is upon us. Okay, I guess potlucks don’t really have a season. But I do feel like more potlucks happen during the summer months than at any other time of the year. I suppose you could argue the holiday season is more potluck-heavy. But I think sit-down dinners still rule the roost in December. But in the summer picnics are plentiful, BBQs are rampant, and no one wants to work that hard because sunshine and beer exist. So potlucks it is. You open your backyard and your friends roll in with far too many salads. But you can defy the salad trope and arrive with these Kimchi Deviled Eggs instead. It’ll blow minds.

If you read this blog you know I love a good leisurely cook. I’m sure some would rather call them “cumbersome” or “needlessly complicated” but I stand by the word leisurely. My recipes tend to celebrate the act of cooking, making a meal out of, well, making a meal. But when the summer hits that all goes out the window. If the sun is shining you will not find me assembling agnolotti. What you will find me doing is tossing protein in a hastily prepared marinade before abandoning it in my fridge. And from there the protein is grilled and served alongside a salad I cobbled together from things in my crisper and, hopefully, a glass of cold beer. It’s a whole different vibe. And today’s Sticky Chicken Thighs with Rice Noodle Salad fits very comfortably into that vibe.
