
Okay, guys! We’re in the home stretch now. All we have to do is clear New Year’s and then we can leave the butter, alcohol and social anxiety behind for another calendar year. Okay, so the holidays are not as bad as all that. But I have to say I’ve never thought of kale quite so longingly. Today’s Black and White Cookie Tart is the last installment in my now two-month long (nearly three) ode to butter. So, after we devour this guy, you have a month of healthy-ish (let’s not go nuts) recipes to look forward to. And then we’ll be back to butter because it will be the dead of Winter and I will be sad.

Do you ever inexplicably know the name of something but actually know nothing about it? You’re not sure where you first heard it or really what it is, but you know the name. Yeah, this happens to me on the regular and most recently it happened with a dish called Peach Melba. While researching poached peaches, which is a totally normal pastime, I came across a recipe called “Peach Melba”. Well, the name tickled my brain enough that I had to look it up and low and behold it was a simple dish with an illustrious history – my favorite. I was so taken with my Google odyssey that today’s Raspberry Ricotta Ice Cream Pie with Anise Poached Peaches is very much inspired by Peach Melba. So without further ado let’s tear into the history of the dish and, of course, this ice cream pie.
There’s nothing more alternative than posting a green dessert a few days after St. Paddy’s, right?! You can chock this questionable content strategy up to poor planning on my part. The holidays are kind of tough. Well, the lead up is tough, it’s like a frickin’ marathon. But the actual holidays are pretty nice.
