Things are finally starting to melt here and the spring rain has begun to fall. It’s damp and grey but I am in no way complaining. Just a week ago, our corner of the world was awash with extreme cold weather warnings and black ice galore. I will gladly take a damp chill over an icy blast any day of the week. But although the weather is slowly improving, that doesn’t mean it’s time to ditch the comfort food and bust out the BBQ tongs. If only it were that simple. So, with the rainy season in mind, I bring you this Pork Stroganoff Pot Pie with Mustard Dill Pastry. It’s warm and comforting, sure, but the dill and lemon really brighten things up. Essentially it’s the promise of spring, encased in pastry…or some sort of poetic shit like that.

So here we are at the end of the worst month of the year. Apologies if you have a birthday around now or you happen to be one of those weirdos who actually like winter, but February is truly the worst. Sure, it’s not like January is much better and March is certainly no picnic. But there is something about February that I find particularly bleak. Perhaps it’s because the glow of Christmas is now a distant memory and spring still seems painfully far away. Either way, February blows, so we all need large, comforting bowls of beans. Bowls filled with Braised Pork Belly and Beans to be exact.

This week it got well and truly cold in Toronto. Layers and lots of them have been my priority all week long. But when I wasn’t willing my jeans to close over my second pair of long johns, I was thinking about places that are not here. Places where there’s no need for parkas, where flowers are in bloom 365 days a year, places where you can contemplate eating something other than chili night after night. Something like these Bún chả Lettuce Cups with their light, crisp texture and simultaneously rich and refreshing flavors. I’ll admit posting these beauties in the midst of winter isn’t the best idea I’ve ever had. But hey! There’s nothing wrong with a little culinary escapism. So crank the heat, swap your snow pants for something fluorescent, and crack a beer. We’re going to pretend we’re anywhere but here.

Today’s Breakfast Polenta Stacks have all the appearance of a hangover cure. They’ve got cheese, fried eggs with deliciously frizzled edges and shatteringly crisp bacon. Oh! And beans, can’t forget them. Beans are central to the recovery process thanks to their powers of absorption and general bulk. But I did not serve these Breakfast Polenta Stacks as a Sunday brunch alongside hair-of-the-dog. I ate these bad boys for Friday night dinner whilst in the process of getting drunk and, man, did it feel spectacularly good…Please drink responsibly.
