I have an affinity for messy sandwiches. If I’m not perplexed by how exactly I’m supposed to eat them, I’m not interested. The origin story of these Stilton Burgers is a long and frankly weird one. It involves a game my family invented where a crushed pop bottle is the ball. It’s best described as snow rugby but, um, with fewer rules. Yeah, it’s weird. Anyway, this was always the lunch of choice after our annual game. I won’t bore you with all the strange details. All you need to know is my family makes these burgers every year during the week between Christmas and New Year’s. Its primary function is to make use of leftover Stilton and to have an excuse to cook outdoors. Snowy picnics are rad in case you didn’t know.

Making a quesadilla for dinner is a lot like walking out of your pants the moment you step through the door – it’s bliss, a relief, a reward. Or at least that’s how I look at it. Quesadillas are a simple pleasure. They can be delicious with nothing more than cheese, or life-changing when more elaborate. And therein lies what I love most about the quesadilla, their versatility. You can stuff any sad thing for your crisper into them and transform it from yuck to yum. But today we’re not making quesadillas out of necessity, we’re making them on purpose. These Acorn Squash Quesadillas are far from flung together but they still feel carefree, fun, and most importantly, cozy.

I’m a terrible gardener. But people tend to think of me as the green-thumb type because I work with food. And I suppose a lot of food people are green thumb people, but I am certainly not one of those people. I think it all comes down to a general dislike of yardwork. I love being outside but weeding is not my idea of a good time. But what makes weeding better? Cooking something slowly and lazily on the BBQ while you work. Something like these Beer-Braised Chicken Tostadas with Schmaltzy Refried Beans. Oh! And a cold beer reward certainly doesn’t hurt.
