I am completely aware of how uncalled for this Fried Burrata Salad is. Burrata is a decadent treat all on its own. So to roll it in potato starch, egg, and panko before deep-frying it is a, um, little much. But we are in the middle of February and Valentine’s Day adjacent, so I’d say a little indulgence is allowed, advisable even. So rather than question the virtuousness of this dish, let’s just make it, enjoy it, and move on with our lives.

Okay, here’s a mash-up no one asked for. California roll meets cobb salad. I will admit, the two classics don’t exactly spring to mind simultaneously. It takes a truly disorganized food-obsessed brain to arrange this meeting. But I must say, I was pretty pleased with this bit of fusion when all was said and done. The two fed into each other surprisingly well. I hate when fusion feels forced, so I’m happy to report this California Roll Cobb Salad came together without a fight. Frankly, the two seem designed for each other. So let’s set about mashing them together, shall we?

If there’s one thing you can learn from today’s Kale Caesar Flatbreads it’s this: Salad is better when served on bread. I know, it’s not really a shocking discovery. Bread has a tendency to make everything better. But this recipe is not all about the bread, although it is spectacular. What you are looking at here is a fluffy flatbread topped with baby kale coated in a whipped feta caesar dressing topped with blood orange, thin slices of red onion, and marinated white anchovies. January is all about resolutions and, unfortunately, many of them surround food. Now, there’s nothing wrong with wanting to up your intake of vitamins or cut down on your meat consumption. But a lot of January pacts seem to sound a lot like restricting. The way I look at it is food is sort of a consolation prize for all the other crap this world throws at us. Does this mean we’re always entitled to that bag of Ruffles? No. Balance is important in all things. But the absence of joy is a problem.
