Believe it or not, I didn’t actually intend to post this Carne Asada Salad on Cinco de Mayo. Things in my calendar shifted and this dish, serendipitously, landed on May 5th. I don’t generally pay that much attention to Cinco de Mayo. I suppose because it really isn’t a thing here in Canada. Sure, you’ll see the odd margarita or Corona special. But for the most part, the day seems to pass largely unmarked. But I love Mexican food, so any excuse to make it is a good excuse in my books. So let’s tackle this wildly vibrant Carne Asada Salad.

Salads rarely inspire backflips. At least that is my experience. I know there are people who adore salads and I am so happy for them. But I am sadly not one of them. But I do believe in the virtues of frequently munching on leafy greens. So when my body starts screaming for spinach and/or kale, I keep my tastebuds happy by adding a hefty dose of either cheese, nuts, meats, or carbs. I rarely put all four into a single salad because that sort of defeats the purpose of having a salad. But in the case of today’s Chorizo Kale Salad with Fingerling Potatoes I pulled meat and potatoes off of the bench and unsurprisingly they took the baby kale base to a whole new level. The chimichurri dressing certainly didn’t hurt either.

It’s been a week. I’m sure I don’t have to tell you why? I’m sure your stress levels are also high and your spirits low. But hey, we’re surviving even if we’re not necessarily thriving. I’m not ashamed to say I’ve leaned on comfort food quite a lot this past week. I submit my previous post for Chili Fries as evidence of this. So, as this emotionally draining week drew to a close, I actually found myself craving a salad. And I’m pleased to say, this Chickpea Pita Salad with Sweet and Sour Date Vinaigrette was exactly what my overwrought nervous system wanted and needed.

I despise winter. But I’m sure you already knew that. And now that we’re nearing the end of February, I’m starting to see the light at the end of the tunnel. But it’s still far too far away for my liking, it’s practically a pinhole, which is depressing, to say the least. So what else can I do in this scenario other than crank up my SAD lamp and start up a new kitchen project like this Warm Duck Citrus Salad? Kitchen projects are the perfect distraction and really, in my book, the only alternative to staring out the window and crying at yet another dump of snow.
