I’ve always been more of a thigh girl than a breast girl. I love saying this. Not only is it true but it also appeals to my inner five-year-old, whose sense of humor oddly intersects with that of a dirty old man. But thinly-veiled innuendos aside, I am telling the truth. I think chicken thighs are better than chicken breasts. I’m team dark meat all the way. But I still think the breast has a time and a place. I prefer chicken breast with caesar salad or in a club sandwich for instance. And I thought I preferred boob when it came to chicken Milanese, scallopine, and/or parmigiana but these Za’atar Crusted Chicken Thighs have given me pause.

I’m not really a salad person. Leafy greens just don’t turn my crank. I prefer to treat the lettuces and kales of the world as accents or companion pieces to something infinitely crunchier, tastier, and definitely not healthier. Give me a salad that is more pasta than vegetable, more cheese than leafy green. Give me a salad with a fried garnish. It’s still technically a salad, it just has more going for it. I do wish I was the kind of person that simply ate for fuel. It would make my late-night-snacking dilemmas a whole lot simpler and a lot less… counterproductive? But that’s just not me. I’m not a salad person. Trust me, I wish I was. I want to be the kind of lady who is happy to eat for fuel and little else. But I am not. Yes, I do like quite a few vegetables well-enough but you’re not liable to find me vibrating over my love of dandelion greens or endive. I treat vegetables as compliments to something richer, and more often than not, fattier. Something refreshing, bitter, or astringent to provide contrast rather than being the main event. This is why you don’t see all that many salads on Rhubarb & Cod. Most of the time I just surrender to the convenience of a bagged salad or a pile of greens with a drizzle of a hastily made vinaigrette. But every now and then, I make truly epic salads. And today’s Crispy Avocado Kale Salad is one such salad.

Does anyone need a break? I know we just had a break but I swear this first week and a half of 2021 has felt like a whole dang year. I don’t think I need to tell you what events I’m referring to and I don’t think it would serve any larger purpose to mention them. So instead I’m going to talk about how my outrage and fear gave way to extreme tiredness, which led to this breezy no-cook meal that is not terrible for you. Sometimes eating your feelings can involve vegetables and these Tofu Salad Bowls are proof of that.
