Easter is fast approaching, so it only made good sense to do an Overthinking Classics on the unofficial dessert of Easter – the carrot cake. I have no idea why carrot cake has anything to do with Easter. Growing up we were far more likely to indulge in a lemon meringue pie and carrot cake was more of a birthday thing. But I suppose I do have an idea. It probably has everything to do with the Easter bunny. In the video below I do dip into the origins of the cake but I don’t talk about the more fanciful trappings of Easter. I really should’ve because this holiday is strange. Stranger than a portly guy shoving himself down a chimney? I would still say yes. A bunny, a mammal, who leaves eggs is hella weird. But that’s not why we’re here, let’s talk cake.

I have a soft spot for pink desserts. I just can’t say no to them. And it’s kind of strange because I wouldn’t say I’m an overly pink-loving person. I don’t own much pink. But if you give me a sleeve of pink macarons, I will squeal with joy like a preteen at a K-pop concert. I’m not proud of this reaction, it’s just a fact. I know spring has sprung but I live in Canada. Spring doesn’t really happen here until mid-April if we’re lucky. Sure, we have the odd good day here and there but a stretch of positive temperatures is not our current reality. And to make matters worse, I find I’m more prone to a chill during fake spring than I am when we’re in the depths of winter. It’s probably because every time the thermometer ventures further south than 5°C, I consider cropped jeans a sensible choice. They never are. By 5 pm the temperature plummets and I’m left with a pair of cold ankles and regret. That’s why I’m still stuck on cozy recipes like today’s Chicken Curry Pot Pies. These petit pies are powerful ankle warmers, and I’m speaking from experience here.
