Whole roasted cauliflower recipes have been making the rounds on the Internet for quite a few years now and for good reason. A head of cauliflower is not only strangely beautiful, but it’s also oddly satisfying. And on top of that, it’s pretty much a blank canvas. Nothing absorbs flavor quite like a cauliflower. I know it’s easy to distrust the deliciousness of cauliflower. The vegetable has been enlisted to play roles it was never meant to play. Masquerading as rice and even bread products, which are “close” to the real deal at best and disappointing at worst. But I promise this Roasted Cauliflower Rarebit will not disappoint you.

Salads rarely inspire backflips. At least that is my experience. I know there are people who adore salads and I am so happy for them. But I am sadly not one of them. But I do believe in the virtues of frequently munching on leafy greens. So when my body starts screaming for spinach and/or kale, I keep my tastebuds happy by adding a hefty dose of either cheese, nuts, meats, or carbs. I rarely put all four into a single salad because that sort of defeats the purpose of having a salad. But in the case of today’s Chorizo Kale Salad with Fingerling Potatoes I pulled meat and potatoes off of the bench and unsurprisingly they took the baby kale base to a whole new level. The chimichurri dressing certainly didn’t hurt either.

Do you go to the pub on St. Patrick’s Day? I never do. I think of March 17th in much the same way I think about December 31st, a big letdown. There are usually overpriced drinks, mind-numbing lines, and far too many people. I love a night out on the town but I do feel like a better one waits for me on the 18th. So what do I do instead? Well, I hang at home with my cats, a decent Irish whiskey (Writer’s Tears tonight), and something sweet. And this year that something sweet is this Irish Coffee Crème Brûlée. I feel very secure in my decisions.

There is a commonly held belief in the culinary world that cheese and seafood should not cross paths. And there is some sound reasoning behind this belief. Strong cheese overpowers the delicate flavors of most kinds of seafood. Reasonable logic, sensible even. But as much as I want to believe and adhere to this piece of culinary gospel my love of tuna melts won’t let me. My mom’s scallop crepes with parmesan cream sauce prevent me. The prevalent popularity of lobster Mac and cheese leaves me with questions. And today’s Crab Cake Patty Melts makes me want to throw the whole notion out the window. If these sandwiches are wrong, well, I don’t want to be right.
