Looking to make something a little different this Easter? I’ve got a dish for you. These Vindaloo Braised Lamb Shanks feature lamb coated in a sauce inspired by the Goan classic slowed cooked for 3 hours until the meat is fall-apart tender. The lamb is served on a bed of creamy risotto studded with sweet peas and toasted cumin seeds and finished with a hefty dollop of Greek yogurt. Finally, the dish is garnished with julienned cucumber, mint, micro-greens, and thinly sliced red chiles. This meal is a nod to the traditional leg of lamb dinner and two Indian classics – vindaloo and raita. It may only be Wednesday but these Chicken Tender Sliders have “weekend” written all over them. Inspired by the chicken nuggets I coveted in my youth, these sliders feature pita-crusted chicken tenders served on mini kaiser buns topped with sweet and sour slaw. The sweet and sour slaw is simply a bag of coleslaw mix dressed with a homemade sweet and sour sauce. This is, of course, a nod to the best nugget dipping sauce around. I know there are probably people who would disagree with that statement but BBQ has nothing on sweet and sour.

Easter is fast approaching, so it only made good sense to do an Overthinking Classics on the unofficial dessert of Easter – the carrot cake. I have no idea why carrot cake has anything to do with Easter. Growing up we were far more likely to indulge in a lemon meringue pie and carrot cake was more of a birthday thing. But I suppose I do have an idea. It probably has everything to do with the Easter bunny. In the video below I do dip into the origins of the cake but I don’t talk about the more fanciful trappings of Easter. I really should’ve because this holiday is strange. Stranger than a portly guy shoving himself down a chimney? I would still say yes. A bunny, a mammal, who leaves eggs is hella weird. But that’s not why we’re here, let’s talk cake.
