We got a lot of snow this week. 40cm to be exact. And I love it. Of course, I feel for all the people inconvenienced by this dramatic weather event. But I do love a good blizzard and I love the opportunity to snowshoe, cross country ski, and generally act like an excitable puppy in a snowbank. But sadly, we’re in for rain followed by a swift drop in temperature. I’m sure I’m not alone when I say I despise icy conditions almost as much as I hate cold rain. But there is a silver lining to this yoyoing weather activity. There will be every excuse to huddle over a simmering pot of this Thai Fish Cake Noodle Soup. It’s been a while since we’ve brunched on this blog. I still regret that I didn’t manage to work a holiday brunch into my content calendar this year, but I suppose that’s what next year is for. But enough about regret, let’s talk about today’s Huevos Rancheros Brunch Burger, a real looker if I do say so myself. What you’re looking at here is a refried bean and wild rice burger patty perched on top of a bun slathered with a simmered tomato salsa and blue corn tortilla chips topped with a sunny-side-up egg. I am no fan of winter. There’s not much to like about this season, in my opinion. Sure, the snow can be pretty but in a big city, it tends to go gray. And yes, the absence of humidity does lead to good hair days. But no one can appreciate my hair because it’s plastered to my head underneath a toque. Basically, you spend 3-4 months covered in so many layers of clothing that you’re more or less egg-shaped, which isn’t great for the ol’ self-esteem. So I do nothing more than try and survive this season. And my winter survival plan always includes having something simmering on the stove. Crafting low and slow dishes keeps me focused, cozy, and yes happy. And today’s Chicken Meatball Mulligatawny Soup is one of those dishes that so firmly put a smile on my face.
