Fried rice never gets the respect it deserves. Sure, the majority of carb-lovers love it. And no one is sorry to see it on a takeout order. I think fried rice might be one of the most universally loved comfort foods, rivaled only by pizza…at least in North America. But unlike pizza, fancy or artisanal fried rice is hard to come by. Even in the blogging world, fried rice is often billed as a dumping ground for leftovers. A quick, easy meal the kids will eat and the perfect vehicle for the sad scallions you almost forgot about. But fried rice deserves better. It most certainly deserves better from me because it has been a huge part of my life all my life. And this is why I went a little above and beyond for this Honey Garlic Fried Rice.

I wound up with wet, cold feet twice this week and it’s only Thursday. Back to back frigid-foot-soakings can only mean one thing: The triumphant return of the cozy season. Yes, I’m ready to hunker down under a heavy duvet of mashed potatoes, cuddle up to some meatballs, and wade into a vat of this Cheesy Squash Soup. I, of course, don’t mean any of this literally. I don’t think mashed potatoes offer an appropriate amount of insulation. But you get my point. We’ve entered the time of year when comfort food reigns supreme. This is my attempt to give noodles “fall vibes”. These Cumin Pork Noodles with Apple Cucumber Relish have both pork and apples, so in my admittedly strange brain that makes them Oktoberfest-appropriate, which makes them fall appropriate. Phew! It was a long walk to get here, but have I convinced you that these are the fall-friendliest rice noodles to ever grace a table? I doubt it. To be honest, I haven’t convinced myself. But I can tell you regardless of how seasonally-appropriate these noodles may or may not be, they are freakin’ delicious so don’t sleep on them.

And just like that, we’re on the doorstep of Canadian Thanksgiving. This holiday always sneaks up on me. One day I’m sipping rose on a patio and seemingly overnight I’m on the hunt for Brussels sprouts. But this year, Thanksgiving really took me by surprise. COVID has been messing with my sense of time all year, why would October be any different? I wish I could say this year’s Thanksgiving will be a holiday as usual. But it won’t. Our case counts are on the rise and we’re being told to limit our dining plans to our own households. No one will be traveling and there will be far fewer mouths to feed turkey to. Consequently, people are on the lookout for smaller festive meal ideas, so I’m happy to add to the din with this Spatchcock Cornish Hen Tray Bake.
