I’ve never been one for Valentine’s Day. The concept of the day never sat right with me. If there were ever an aspect of a person’s life one should feel absolutely no shame about, it’s their relationship status. Whether you’re single or attached or somewhere in between, it says very little about you or your worth, in my opinion. So organizing a day to celebrate what is celebrated and praised all year round is ludicrous. Diagnosing the health of your relationship based on the displays of affection (or lack thereof) you received on one day – bonkers! And it’s not even a holiday, you still have to go to work. So I’ve decided Valentine’s Day is not a celebration of love. It’s the celebration of the color pink and frothy feminine desserts. So let’s kick the festivities off with these Raspberry Ricotta Mousse Cakes.

Many thoughts ran through my head while I was constructing this Five Spice Gingerbread Cake. “Why am I doing this to myself?” was the loudest and most insistent among them. This whole over-the-top exercise began when I got the “fun” idea of doing a gingerbread diorama on a cake. And once that idea took root in my brain, I knew I was in trouble. I don’t make gingerbread – I’ve never even attempted a prepackaged house kit before this. And my experience with royal icing is…scant. But I’m stubborn, so I persevered and I am so glad I did.

A traditional alfajor cannot be improved upon. Alfajores are, in my opinion, the perfect dessert. They have melt-in-your-mouth cookies, a creamy, complex, and gooey center, and they can be rolled in shredded coconut. Essentially they pluck at all my heartstrings. So you may be wondering why I would ever choose to alter them. Well, it’s certainly not to elevate them, as I mentioned above, this South American delicacy is the pinnacle of cookie perfection. I decided to introduce s’mores to the classic alfajores because I thought it would taste good. Seriously, that is the only reason. And you know what? I was right. But do these S’more Alfajores beat out the original? No, I wouldn’t say they’re better, they’re just different and variety is the spice of life.

Yes, this is a Toasted Fluffernutter Sheet Cake. Yes, like the official sandwich of Massachusetts. And yes, the fluffernutter is the official sandwich of Massachusetts. I looked it up. The fluffernutter sandwich gets a lot of flack due to its use of bottled marshmallow cream and utter lack of nutrition. And yeah, okay I can see where people are coming from. Marshmallow cream is generally not part of a high-brow balanced breakfast. But what if you swapped the processed cream for the more respectable Italian Meringue and moved the peanut/marshmallow pairing to a more suitable time of the day, i.e. dessert? Not so trashy afterall.
