Today’s Coconut Cream Pie is the first installment in what I hope will be a long-running series we’re calling Overthinking Classics. Most of the recipes that appear on this blog strive to be different, which is great. But in my day-to-day life, my cravings tend to be rather pedestrian. I have a lot of love for classic dishes and I think about and cook them often. And every time my brain picks them up, I try to improve upon them. They never find their way here, though. I always think they aren’t interesting enough to be blog-worthy fare. But I hope this new series will give a home to all the pearls of wisdom I have accumulated about the dishes we know and love.

I think it’s safe to say these Peanut Butter Bombes are not good for you in any traditional sense. They aren’t keto or paleo or refined sugar-free. What they are, though, is the taste of joy. A pure and utter indulgence that makes you tingle from toes to nose…that might also be the sugar. There’s no way to tell. I made these with my father in mind. Peanut butter is pretty much his life’s blood at this point and he’s also an ardent fan of caramel and potato chips. So naturally, I turned his favorites into a bombe because a bombe is pretty much three desserts in one. And I will break each layer down in detail and you’ll see these bombes are nothing to fear.

Sometimes failed desserts turn into something delicious. And when I say “sometimes” I really do mean it. Most of the time when a dessert fails you’re left with a cake that could double as a doorstop or nougat that could chip a tooth. But that’s not what happened this time. No, this time my failed cake turned into a round of these excellent Rhubarb Vanilla Floats. And if you’re confused as to how a cake turned into an ice cream float, I don’t blame you. There are few lunch items in the world that can rival the perfection that is a PB&J sandwich. Something so simple and so beloved, almost every person on the planet has had one and loved one. Except for those born with a nut allergy – my condolences by the way. I count myself among that many that love this classic sandwich. But my reverence doesn’t stop me from messing with it. PB and J is a fun combo of the flavors that are compatible with most dishes. Particularly if those dishes are of the dessert persuasion. So without further ado, allow me to introduce what I believe to be the happiest home for peanut butter and jelly – the PB and J Silk Pie with Oreo Crumb Crust.
